As a Service Leader -?ADD Kitchen,?we?rely on you to:
作為酒店全日開放餐廳廚房主管,需承擔(dān)以下主要工作職責(zé):
1. Execute the work instructions of the chef and complete the daily work arrangement of the wok.
2. Understand the order situation of the day, communicate with the chef about the work arrangement of the day, make full preparation before the meal, and ensure the speed and procedure of serving food.
3. Check the normal operation of the wok equipment every day, and notify the engineering department to repair the problem in time.
4. Prepare meals according to the situation of customers, cook on the stove within the specified time, check whether the dishes are complete, assist the chef to do a good job of serving, ensure that the quality of the product meets the requirements of the meal, and provide some necessary technical guidance for the dish.
5. Familiar with the use of main ingredients, ingredients and seasonings of dishes, master basic cooking techniques, and understand the cooking characteristics such as tender and smooth, soft and waxy rotten, crisp and crispy. Cook dishes in strict accordance with the feeding proportion of the main dish and the auxiliary materials and the hygiene standards.
6. Prepare and supplement various seasonings for semi-finished products needed on the day.
7. Complete other tasks assigned by superiors.

2. 了解當(dāng)日訂餐情況,與廚師長溝通當(dāng)日工作安排,做好充分的餐前準(zhǔn)備,保證出菜速度及出菜程序。
3. 每天檢查炒鍋的設(shè)備運(yùn)轉(zhuǎn)是否正常,發(fā)現(xiàn)問題及時通知工程部維修。
4.?根據(jù)上客情況備餐,在規(guī)定時間內(nèi)進(jìn)行爐灶烹制,查看菜品是否齊全,協(xié)助廚師長做好出餐工作,保證出品質(zhì)量達(dá)到出餐要求,并對打荷進(jìn)行一些必要的技術(shù)指導(dǎo)。
5. 熟悉菜品主料、配料、調(diào)味的使用,掌握基本烹調(diào)技法,了解嫩滑爽、軟糯爛、酥松脆等烹調(diào)特點(diǎn)。嚴(yán)格按照菜品主、輔料的投料比例、衛(wèi)生標(biāo)準(zhǔn)烹制菜肴。
6. 制作當(dāng)天所需半成品配制和補(bǔ)充各種調(diào)料。
7. 完成上級交代的其它工作。

1. More than 3 years wok working experience.
