1. Oversees the preparation of kitchen equipment for use
監(jiān)督廚房設(shè)備的使用準(zhǔn)備情況。
2. Oversees the receive and storage of kitchen goods
負(fù)責(zé)監(jiān)管廚房貨物的驗(yàn)收與貯存。
3. Oversees the cleaning and storage of kitchen equipment
監(jiān)督廚房設(shè)備的清潔和儲(chǔ)存情況。
4. Oversee the cleaning of the kitchen
監(jiān)督廚房的清潔。
5. Oversee the process of discharged food and beverage
監(jiān)督餐飲廚余處理的程序。
6. Maintaining the entire food safety system within the hotel
負(fù)責(zé)維護(hù)整個(gè)酒店的食品衛(wèi)生安全系統(tǒng)。
7. Organize food safety training to all related associates, also including food suppliers
組織酒店所有相關(guān)員工,以及食品供應(yīng)商,定期對(duì)他們進(jìn)行食品衛(wèi)生安全培訓(xùn)。
8. Control and follow up all procedures such as purchase, receiving, storage, process etc., and also pay attention to the feedback when guests are leaving restaurant.
負(fù)責(zé)對(duì)采購(gòu)、收貨、儲(chǔ)存、加工等環(huán)節(jié),以及客人離開(kāi)餐廳后一系列反應(yīng)的監(jiān)督與跟蹤。
9. Check all monitoring records to all of related department, see if write correctly and archived them as per required and standard
檢查并監(jiān)督相關(guān)部門(mén)是否按照要求,完成了所有記錄的填寫(xiě),并分類(lèi)存檔。
10. Ensure that appropriate food sampling followed the food safety manual standard, and check it on time.
要求廚房按食品安全手冊(cè)標(biāo)準(zhǔn)要求的將食品留樣,并定時(shí)檢查。
11. Contact government department or The third party to finish food and utensil microbial testing as the required frequency
定期聯(lián)系政府部門(mén)或第三方食品公司做食品及器皿微生物的檢測(cè)。
12. Make rapid test for microbe as schedule
定期使用試劑做微生物的快速檢測(cè)。
13. Check and Report the non-compliance finding on food safety every day, and then provide the follow up action and solution
每天監(jiān)測(cè)及報(bào)告不符合標(biāo)準(zhǔn)的食品衛(wèi)生安全問(wèn)題,后與相關(guān)部門(mén)協(xié)調(diào)解決。
14. Monthly report to hotel Executive Committee, let them know that hygiene issue and progress at present
每月出報(bào)告,讓酒店管理層知道,目前食品衛(wèi)生安全存在的問(wèn)題及進(jìn)展。
15. Responsible for food safety chairing and meeting within the hotel
負(fù)責(zé)組織食品衛(wèi)生安全講座和會(huì)議。
16. Responsible for the development and the maintenance of the food safety noticeboard
負(fù)責(zé)更新、發(fā)展和維護(hù)食品安全板報(bào)。
17. Responsible for the calibration of all hotel probe thermometers
負(fù)責(zé)定期校準(zhǔn)酒店所有溫度計(jì)。
18. Responsible for the connection with related government department
負(fù)責(zé)酒店與政府衛(wèi)生部門(mén)的所有聯(lián)系。
19. Ensure that update Food Safety system timely according to group standards and local law.
確保酒店整個(gè)食品安全系統(tǒng)能夠根據(jù)集團(tuán)要求及當(dāng)?shù)胤杉皶r(shí)更新。
