工作職責(zé):
設(shè)計并執(zhí)行符合酒店定位的高端西點、甜品、面包及巧克力菜單。
確保所有出品符合食品安全標準及酒店品質(zhì)要求。
定期更新季節(jié)性菜單,融合創(chuàng)新技術(shù)與經(jīng)典工藝。
統(tǒng)籌餅房日常生產(chǎn)計劃,包括宴會、餐廳、客房送餐及特殊活動
監(jiān)督食材采購、庫存管理及成本控制,減少浪費。
維護廚房設(shè)備,確保符合衛(wèi)生及安全規(guī)范。
培訓(xùn)、督導(dǎo)餅房團隊(廚師、學(xué)徒),提升專業(yè)技能與服務(wù)意識。
排班及績效考核,營造高效協(xié)作的工作環(huán)境。
與餐飲部、宴會部及客房部協(xié)調(diào),確保甜品服務(wù)與酒店整體體驗無縫銜接。
參與酒店主題活動(如下午茶、節(jié)日慶典),提供定制化甜點方案。
崗位要求:
- 具備烹飪藝術(shù)專業(yè)文憑。
- 3年以上高端酒店或米其林餐廳餅房工作經(jīng)驗,2年以上管理經(jīng)驗。
- 具有實際操作經(jīng)驗和創(chuàng)造力。
- 具備組織,靈活,自我激勵和親力親為的日常工作。
- 優(yōu)秀的領(lǐng)導(dǎo)和團隊管理能力
- 具備推動和維護食品質(zhì)量標準能力,并在整個部門執(zhí)行食品安全計劃。
- 擅長成本控制與菜單定價。

Job Responsibilities:
Design and implement high-end Western pastry, dessert, bread and chocolate menus that are in line with the hotel's positioning.
Ensure that all products meet food safety standards and hotel quality requirements.
Regularly update the seasonal menu, integrating innovative technologies with classic craftsmanship.
Coordinate the daily production plans of the bakery, including banquets, restaurants, room service and special events
Supervise the procurement of food ingredients, inventory management and cost control to reduce waste.
Maintain kitchen equipment to ensure compliance with hygiene and safety standards.
Train and supervise the bakery team (chefs and apprentices) to enhance their professional skills and service awareness.
Shift scheduling and performance assessment to create an efficient and collaborative working environment.
Coordinate with the catering department, banquet department and housekeeping department to ensure that the dessert service seamlessly integrates with the overall hotel experience.
Participate in hotel theme activities (such as afternoon tea and festival celebrations) and provide customized dessert solutions.
Job Requirements:
-?Possess a diploma in culinary arts.
- More than 3 years of working experience in a high-end hotel or Michelin-starred restaurant bakery, with over 2 years of management experience.
Have practical operation experience and creativity.
- Possess organizational, flexible, self-motivated and hands-on daily work skills.
- Excellent leadership and team management skills.
- Have the ability to promote and maintain food quality standards and implement food safety plans throughout the department.
- Skilled in cost control and menu pricing.
- Those with overseas cooking experience and working experience in China are preferred
- Those who can adapt to high-intensity work and have good English communication skills are preferred.
