職責(zé)概要/目的: 協(xié)助行政助理經(jīng)理/餐飲部總監(jiān)進(jìn)行全面的行政管理工作,以及運(yùn)營(yíng)管理,使利潤(rùn)最大化。確保保持質(zhì)量標(biāo)準(zhǔn)、員工工作表現(xiàn)和令客人喜出望外。
Job Summary/Purpose: To assist the E.A.M / F&B Director in the overall administration and operation of the F&B Operation, to maximize profits. To ensure maintenance of quality standards, staff performance and customer satisfaction.
1.
To have complete knowledge on the food / beverage / service available in sections appointed?全面了解指定餐廳的食品/酒水/服務(wù)的情況。
2. Ensure that SFSMS, Hygiene and Food Safety Management Policies, Fire & Life Safety Standards
are explained to staff, and are correctly applied?確保向員工說(shuō)明香格里拉食品安全管理系統(tǒng)、衛(wèi)生和食品安全管理政策、消防和生命安全標(biāo)準(zhǔn),并保證實(shí)施正確。
3. Ensure that SLIM and Hotel standards and policies are explained to staff, and are correctly applied. 確保向員工說(shuō)明集團(tuán)總部和飯店的各項(xiàng)標(biāo)準(zhǔn)及規(guī)定,并保證這些標(biāo)準(zhǔn)和規(guī)定的正確實(shí)施。
4.Monitor and ensure smooth operations of the sections appointed (restaurants / banquet / beverage - as applicable).監(jiān)督并確保指定部門(mén)(根據(jù)各餐廳/宴會(huì)部/酒水的不同情況)的順利運(yùn)營(yíng)。
5. Take full responsibility for daily restaurant operations, ensuring standardized and efficient service processes to enhance customer experience and brand image.全面負(fù)責(zé)餐廳日常運(yùn)營(yíng),確保服務(wù)流程標(biāo)準(zhǔn)化、高效化,提升客戶(hù)體驗(yàn)與品牌形象。
6.Develop and implement operational plans, monitor service quality, food delivery speed, and cost control to achieve business objectives.制定并執(zhí)行運(yùn)營(yíng)計(jì)劃,監(jiān)督服務(wù)質(zhì)量、菜品出品速度及餐廳成本控制,達(dá)成經(jīng)營(yíng)目標(biāo)
7. Regularly analyze operational data (e.g., table turnover rate, average guest check, cost ratio) to optimize operational strategies.定期分析運(yùn)營(yíng)數(shù)據(jù)(如翻臺(tái)率、客單價(jià)、成本率等),優(yōu)化運(yùn)營(yíng)策略。
8. Maintain consistency in quality of food / beverage / service / cleanliness of sections appointed. 始終如一地保持指定餐廳的食品/酒水/服務(wù)/清潔度。
9. Constantly obtain customer feedback during operations to ensure satisfaction. 在運(yùn)營(yíng)中不斷地收集客人的反饋意見(jiàn),以確保令客人喜出望外。
